The ONLY thing in my book that is better than makeup is.....

FOOD!!!!

Yep...THIS girl LOVES to stuff her face!!!

So as you might guess...Thanksgiving is definitely one of my favorite holidays!



That being said...I also LOVE to cook, and bake!

This year I have been commissioned by my wonderful Mother-In-Law to bake a peanut butter pie for our Thanksgiving dinner. 
BUT...
It's not just any old peanut butter pie....

It's my Mema's Peanut Butter Pie!



If you don't know...that is the HOLY GRAIL of peanut butter pies!
Seriously...it's the best thing ever!! 

So today I am foregoing the makeup posts....and I am sharing my Mema's Old Fashioned Peanut Butter Pie Recipe with you!

If you have family, significant others, or friends to impress this holiday season....you might wanna pay close attention and whip this up!

It's a no fail perfect 1st impression maker!


Mema's Peanut Butter Pie

You KNOW the recipe will be amazing when it is written out with Love by your own Mema's hand!




  So here are the ingredients you will need:

 1 Cup Powdered Sugar
3/4 Cup Creamy Peanut Butter
1 Baked Pie Shell
1/4 Cup Cornstarch or Flour
2/3 Cup Sugar
1/4 Teaspoon Salt
2 Cups Scalded Milk
3 Eggs (Separated) - Beat Yolks
2 Tablespoons Butter
1/4 Teaspoon Vanilla

Meringue Ingredients:
3 Egg Whites from the Eggs above (At room temperature)
1 - 7oz Jar Marshmallow Cream





Let's get STARTED!!






First, unroll a pie crust into an ungreased 9 inch glass pie dish. 
You can make your own dough of course, but it's just easier this way and still tastes just as good!




Poke holes with a fork in the crust so it won't BLOW UP in the oven. You can also make decorative edging if you want. I just press the edging with a fork.
 



 Bake the pie crust for 11-13 minutes at 400 Degrees, or until slightly golden brown around the edges. (You will be baking again later so don't get it TOO brown).
 


Let the baked crust cool completely before adding the filling.




Mix the 3/4 Cup Peanut Butter and 1 Cup Powdered Sugar together until it becomes dough like. (It will be slightly crumbly, but that's what you want!)
 



Place the peanut butter mixture into the baked pie crust and mash until it reaches the edges. Reserve the left over peanut butter crumbs to top the pie with.






Heat 2 Cups of Milk until HOT, but not boiling. Be careful not to let it burn! (That smells SO bad...and there is no saving it!).



Once the milk is scalded, reduce heat to medium and add the butter, sugar, cornstarch/flour (I used cornstarch), salt, and beaten egg yolks to the hot milk and stir CONTINUOUSLY! 
Seriously....keep that spoon moving! You are basically making old fashioned vanilla pudding so you have to keep the mixture moving so it can thicken to a pudding consistency.

There you GO! 
Now we have pudding!
(Go ahead...lick the spoon! It's awesome!!)

 




Once the pudding is thickened and delicious....Pour on top of the peanut butter mixture in the pie crust.
  



NOW...it's Meringue time!!!

I'm not an egg meringue fan at ALL.....YUCK...it's like....puffy eggs...Nasty!! 

BUT THIS meringue has a whole jar of Marshmallow cream in it! 
TOTAL MERINGUE REDEMPTION! 




 Pour the room temperature egg whites into a large bowl and beat on low speed until they get "stiff" or until they look frothy and can hold a little shape when you pull the beaters out. 




 Once stiffened, add the jar of Marshmallow Cream...Feel Free to lick the spoon!





Beat on low until blended and then push it up to high speed until the meringue becomes stiff and glossy (And can also stiffly stick to the beaters when you pull them out).  





 Now pour the meringue over the peanut butter/pudding in the pie crust.






 Once smooth, begin to "make mountains" out of the meringue. (Basically you slap it with your utensil and the meringue will stick to it when you pull it up and make little "mountains")





See how pretty that makes it!!??






Now take those remaining peanut butter crumbs you had from mixing the peanut butter and powdered sugar together and sprinkle over the top of the pie.  






Pop the pie in the oven at 325 Degrees for 15-20 minutes, or until the meringue is lightly browned.


DONE!!!!

Seriously... You won't regret making this pie!

It's a wonderful dessert for the holidays AND it's SO easy, but also IMPRESSIVE!!!

  2. I am going to need for you to ask your Sister to make this for supper club please! My little girl is allergic to peanuts so that's the only way I could eat this. It looks AMAZING!
